Cream of Mushroom Soup

1 tbsp olive oil

½ large onion (diced)

6 cloves minced garlic

2 cups bone broth

1 cup heavy cream

1 cup unsweetened almond milk

¾ tsp sea salt

¼ tsp black pepper

2 cups mushrooms, sliced

In a large pot over medium heat, sauté the onions and mushrooms in olive oil for about 10-15 minutes, stirring occasionally. Add the minced garlic. Let cook for another minute or two.
Add the bone broth, heavy cream, unsweetened almond milk, sea salt, and black pepper. Bring to a boil, then simmer for 15 minutes, stirring occasionally.
Use a blender to puree until smooth.
