Ingredients:
2 medium zucchinis
24 pepperoni slices
1 cup mozzarella cheese, shredded
2 tbsp Parmesan cheese
1 tbsp avocado oil
salt and pepper to taste
Directions:
- Preheat oven to 350°F and grease a baking sheet.
- Remove the ends from the zucchini, cut in half lengthwise, and scoop out pulp.
- Sprinkle salt and pepper on top of the zucchini shells.
- Fill the zucchini boats with mozzarella cheese and pepperoni slices.
- Sprinkle additional mozzarella and Parmesan cheese on top.
- Place zucchini on baking sheet and cook for 25 minutes or until zucchini is tender.
