Ingredients for Dressing:
1 ripe avocado, diced
¼ cup fresh cilantro, rough chopped
1 tsp garlic powder
1 tsp onion powder
1 large lime, juiced
¼ cup olive oil
½ tsp salt
¼ tsp black pepper
water (to thin)
Ingredients for Chicken & Rub:
1 chicken breast (7-8 oz)
5 oz mixed greens
10 grape tomatoes
1 tbsp coconut oil
1 tsp chili powder
1 tsp onion powder
1 tsp garlic powder
½ tsp paprika
½ tsp cumin
½ tsp oregano, dried
½ tsp mustard powder
½ tsp salt
½ tsp black pepper
Directions:
- Combine dressing ingredients, except olive oil and water, in a blender or food processor.
- Blend ingredients until well incorporated.
- Slowly drizzle olive oil in while blending.
- Add a little water at a time until desired consistency is reached.
- In a separate bowl, combine chicken rub seasoning.
- Coat the outside of chicken breast, patting to ensure seasonings stick.
- Heat coconut oil in a medium-sized pan.
- Cook chicken over medium-high heat for 6–8 minutes on each side until you reach 155–160ºF.
- Let chicken rest for 5 minutes, then dice.
- Divide mixed greens into 2 serving bowls, add tomatoes and diced chicken, top with dressing. Enjoy!
