Southwest Chicken Mixed Green Salad with Cilantro Lime Avocado Dressing

Ingredients for Dressing:

1 ripe avocado, diced

¼ cup fresh cilantro, rough chopped

1 tsp garlic powder

1 tsp onion powder

1 large lime, juiced

¼ cup olive oil

½ tsp salt

¼ tsp black pepper

water (to thin)

Ingredients for Chicken & Rub:

1 chicken breast (7-8 oz)

5 oz mixed greens

10 grape tomatoes

1 tbsp coconut oil

1 tsp chili powder

1 tsp onion powder

1 tsp garlic powder

½ tsp paprika

½ tsp cumin

½ tsp oregano, dried

½ tsp mustard powder

½ tsp salt

½ tsp black pepper

 

 

Directions:

  1. Combine dressing ingredients, except olive oil and water, in a blender or food processor.
  2. Blend ingredients until well incorporated.
  3. Slowly drizzle olive oil in while blending.
  4. Add a little water at a time until desired consistency is reached.
  5. In a separate bowl, combine chicken rub seasoning.
  6. Coat the outside of chicken breast, patting to ensure seasonings stick.
  7. Heat coconut oil in a medium-sized pan.
  8. Cook chicken over medium-high heat for 6–8 minutes on each side until you reach 155–160ºF.
  9. Let chicken rest for 5 minutes, then dice.
  10. Divide mixed greens into 2 serving bowls, add tomatoes and diced chicken, top with dressing. Enjoy!
