Ingredients:
1 lb ground beef
3 tbsp taco seasoning
salt to taste
1 head iceberg lettuce, chopped
2 medium tomatoes, diced
4 green onions, chopped
1 cup cheddar cheese, shredded
2 cups cauliflower rice
Directions:
- In a skillet, brown beef over medium high.
- Drain grease and mix in taco seasoning.
- Set mixture aside and allow to cool.
- In a skillet, cook the cauliflower rice over medium-high heat for 8-10 minutes.
- Set aside cauliflower rice and allow to cool.
- When ground beef and cauliflower are cold, place in a large bowl and add all remaining ingredients.
- Try topping with guacamole, sour cream, or more cheese for an added bit of flavor and fat!
